A week without much ado is a good week to try something new!  I have thought that setting each night up with a basic theme and then planning two meals from the pantry/freezer would make my life easier this summer.  So I’ve been playing around with some ideas, and looking for an alternative recipe for some of our favorite dishes to toss in.

Monday:  Just always seems to be spaghetti.  Summers coming, so thinking of a cool dish instead of a hot one, I thought this might be good to try…http://www.kraftfoods.com/kf/recipes/garden-fresh-pasta-salad-63783.aspx

Tuesdays:  Chicken Dish.  We usually have sweet and sour or lemon pepper.  This sounds like a great dish I’ll let you know…http://www.kraftfoods.com/kf/recipes/parmesan-crusted-chicken-in-cream-91371.aspx

Wednesday:  Pizza or tacos.  Since we usually do a make-your-own type meal, I thought a baked potato bar would be a nice change.

Thursday:  Usually catered to the kids choices.  Instead of hot dogs or chicken nuggets, this sounds like a winner…

Paula Deens’ The Lady’s Cheesy Mac:

  • 4 cups cooked elbow macaroni, drained
  • 2 cups grated Cheddar
  • 3 eggs, beaten
  • 1/2 cup sour cream
  • 4 tablespoons butter, cut into pieces
  • 1/2 teaspoon salt
  • 1 cup milk

Preheat oven to 350 degrees F.

Once you have the macaroni cooked and drained, place in a large bowl and while still hot and add the cheddar. In a separate bowl, combine the remaining ingredients and add to the macaroni mixture. Pour macaroni mixture into a casserole dish and bake for 30 to 45 minutes. Top with additional cheese if desired.

Then for my fri-sat-sun choices, considering one night mexican, one night steak, and one night breakfast for dinner.
